I may have woken up to a light blanket of snow this morning (wtf Spring?), but that's not gonna stop me from making one of my most favorite salad recipes, that just so happens to be great for muscle recovery!
Yup. It's almost June (I mean, kind of) and it snowed last night. I know we need all the moisture we can get (looking at you wild fire season), but it's still a little...disappointing. I'm not gonna let it stop me, though! I mean, I am gonna let it stop me from playing on outdoor courts and wearing flip flops when I walk the dogs, but I'm not gonna let it stop me from making this super delicious, and super summery watermelon salad.
It's super easy and so effing good. Plus, according to people who know things , watermelon has a bunch of good stuff in it that helps with muscle recovery (think amino acids, carbs, antioxidants), so it's a great recipe to put in your regular rotation.
